Long and dry on the palate with balanced acidity and bitterness up front, followed by fresh hues and herbal notes. It has a long finish and accompanied by tasty tannins. The balance between acidity and bitterness means this cider has a long shelf life once bottled, and is reminiscent of traditional ciders.

Main varieties: Astarbe, Mendiola, Moko, Txalaka, Goikoetxe and other select varieties.

Minimum ageing period: 2 months.
