What a dream! Beautiful nose of yellow and white fruits with floral and dry herb notes. The palate is full, rich and complex with a saline finish, and its concentration reveals a beautiful structure. Great balance and length. Fabulous!

Vinification & Aging: After a slow direct pressing, almost without re-draining, and a settling on the drained juices, the must is put directly into small tanks where the fermentations take place naturally during more than 20 months, without exogenous yeasts nor any oenological products except a little volcanic sulfur.

Cellaring : 8-10 years, to be decanted before serving at 12-13 °C
